When you have BBQ pulled pork sandwiches one night for dinner, you can probably guess what’s for dinner the next night – leftover BBQ pulled pork nachos! And what a treat it is!
This pulled pork nachos recipe uses the leftover pulled pork we made in the Instant Pot for slider sandwiches the night before, which contains BBQ sauce. We do not add any BBQ sauce to this recipe we are making today, so if you are using a leftover pulled pork recipe without a barbecue flavor to it, you can certainly add some BBQ sauce to it.
Our homemade nachos recipe is a big batch. We used the leftover meat from the night before. But, you can always cut this recipe in half. Also, this recipe tends to be a little hot, and a little spicy, but you can switch to your favorite salsa and use medium spicy salsa or if you want it hotter, extra hot and spicy salsa.

- A bag of your favorite crispy tortilla chips – 24 ounces
- 1/2 jar of hot thick and chunky salsa and 1/2 jar of medium thick and chunky salsa – 24 ounces total
- One can of refried beans – 16 ounces
- Shredded extra sharp cheddar cheese – 16 ounces
- One can of black beans (15.5 ounces)
- Shredded Monterey Jack cheese – 8 ounces
🥄 How to Make Pulled Pork Nachos with Leftover Pork
These step-by-step instructions are accompanied by detailed photos for enhanced clarity and guidance.
Step 1. Preheat Oven and Prepare the Baking Pan
Preheat the oven to 350 degrees Fahrenheit, then cover a rectangular metal sheet pan, large baking sheet, or rimmed baking sheet or tray, approximately eleven by fifteen inches, with a piece of aluminum foil or parchment paper. Whatever flat pan you use, make sure it has a rim around it, so the ingredients won’t fall out into the oven.
Note: Using aluminum foil makes for easy clean up when it comes time to clean the sheet pan. However, if you don’t have any aluminum foil or parchment paper, spray the sheet pan generously with non-stick cooking spray.
Step 2. Spread Nacho Chips on Aluminum Foil
After you have prepared the sheet pan, spread out a layer of your favorite crispy chips. We chose Juanita’s tortilla chips fiesta bag, 24 ounces, for this delicious recipe.
Step 3. Add Salsa and Refried Beans
In a bowl, add half of the 24-ounce jar of hot salsa, and half of the 24-ounce jar of medium salsa together with one 16-ounce can of refried beans. Mix well.
Tip: Store the leftover salsa in the refrigerator for another batch of pulled pork nachos, or for another recipe, or use it for chips and salsa dip.
Step 4. Stir in the Black Beans
Drain the liquid out of the 15.5 ounces of black beans and then add it together with the salsa and refried bean mixture. Stir until blended well.
Step 5. Add Monterey Jack and Sharp Cheddar Cheese
Put the 8-ounce bag of Monterey Jack cheese and a little bit of the sharp cheddar cheese together with the salsa, refried beans, and black bean mixture. Save the rest of the cheddar cheese for the topping later.
Step 6. Mix Thoroughly
Stir the Monterey Jack cheese and the sharp cheddar cheese together with the salsa, refried beans, and black beans.
Step 7. Heat the Leftover Pulled Pork
Heat the leftover pulled pork for about 5 minutes in the microwave, then add the leftover pulled pork together with the salsa mixture.
Step 8. Stir all Ingredients
Then, using a spoon, stir the pulled pork together with the salsa mixture.
Step 9. Spread the Pulled Pork and Salsa Mixture
Using a spoon or spatula, spread the pulled pork and salsa mixture on top of the chips, covering most of the chips. At this point, you can add any additional favorite toppings you like.
Step 10. Toss on the Sharp Cheddar Cheese
Sprinkle the remaining shredded sharp cheddar cheese all over the pulled pork salsa mixture.
Step 11: Bake the Pulled Pork Nachos in the Oven
Put the pulled pork nachos in the preheated oven and bake at 350 degrees Fahrenheit for about 20 minutes, or until the cheese has melted. After that, the pulled pork nachos are ready to serve. You can put any of your favorite fresh toppings on at this time that you didn’t want to bake in the oven.

- Before putting this pulled pork nacho recipe into the oven, you can add chopped bell peppers, green onions, fresh cilantro, or slice up a red onion.
- Shake a few drops of hot sauce on your serving of pork nachos, or sprinkle on some hot red pepper flakes.
- Serve with a dollop of sour cream on top of the pulled pork nachos.
- Try a different kind of cheese, whatever is your favorite. For example, maybe Colby Jack, pepper Jack, or a Mexican blend cheese.
